I totally forgot that Car had a potluck den meetingĀ for cub scouts tonight! The reminder email came in at 4pm – bring a side or dessert, be there at 5pm. By 4:40pm, this salad was ready to go! I was pretty excited about that because I was at a total loss and usually can only function when everything is planned ahead (and I remember what is planned!)

The trick to throwing this together fast is to cool the pasta with ice cubes. Just put a few handfuls of ice on top of the drained pasta and toss gently until cool. If you have a few small pieces of ice left, just run some cold water over the whole thing. That’s it, the pasta is ready to go. Tailor theĀ ingredients to what you like and have on hand – if you don’t like tuna, you can add extra veges instead.

1 hour Macaroni Salad

Fast Recipe for traditional macaroni salad.

Ingredients
  

  • 1 lb pasta macaroni or any shape
  • 1 can tuna packed in water drained well
  • 3/4 cup mayonnaise
  • 1/4 cup fresh chopped parsley
  • 1/4 up finely chopped onion
  • 1/4 cup finely chopped celery
  • 1/4 cup frozen peas optional

Instructions
 

  • Cook the pasta according to package directions. Drain.
  • Cool the pasta quickly by adding ice cubes to the pasta in the strainer and gently tossing.
  • Rinse with cold water to make sure the ice cubes are melted.
  • Shake to make sure all the water is out.
  • Add the pasta and remaining ingredients to a bowl.
  • Mix well and serve.
