Apple Squares

 

Apple SquaresI love apples and this time of year, it’s hard for me to resist making all my favorite apple recipes! This apple square recipe has been around for a while. I remember my Mom making these when I was a kid. We loved them and everywhere she brought them, people always asked for the recipe. They really are delicious and easy to make. The recipe is a little unconventional, but the result is delicious! This recipe makes one 9×13 pan, but you can easily double if you need to feed a crowd.

Easy and delicious recipe for apple squares.

Ingredients
  

  • 1 3/4 cup sugar
  • 3 eggs
  • 2 cups all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg optional
  • 1 tsp. vanilla extract
  • 1 cup vegetable oil
  • 2 cups sliced apples
  • 1 cup chopped walnuts

Instructions
 

  • In a large mixing bowl, beat the eggs and sugar with a whisk until light in color.
  • Add the dry ingredients and mix well.
  • Add the oil and vanilla - it will look strange like it won't mix in, but keep at it.
  • Fold in the apples and nuts.
  • Spread in a greased 9x13 pan.
  • Bake at 350 degrees for 40 minutes.
  • Serve warm or cool.

I like that this recipe can be made without a mixer – goes together pretty quickly if you’re in a hurry.

It doesn’t take too long to get the eggs and sugar nice and light – just make sure they are mixed well. Add the dry ingredients and mix with whisk or mixing spoon. The batter is pretty thick at this point.

Stir in the vanilla and oil.

To me, this is the strange part of this recipe. The oil kind of sits on there and seems like it will be hard to mix in at first, but then it incorporates nicely.

Add the apple slices and walnuts. You could use pecans instead of walnuts if you like them better. Any nut would probably work or if you don’t like nuts at all, just leave them out.

Mix it all in.

Spread the batter into a greased 9×13 pan. A frugal tip for greasing baking pans – save the wrappers that butter sticks come in and use these to grease baking pans. I keep a little container in the fridge that I put butter wrappers in, then I have them ready when I need them.

Bake in a 350 degree oven for 40 minutes.
