Biscuit Pizza

Biscuit Pizza is our super fast way to throw a pizza together and still have it homemade. When time allows, I like to make pizza using Easy Artisan Bread dough as the pizza dough, but when time is short and I have no dough made ahead, I throw a pizza together using Fast and Easy Biscuits as the crust. I first tried this when my Dad came to visit. He has a hard time with his dentures so usually opts for soft food. He likes pizza but can’t chew the crust, so I tried to think of something that would be a little softer and decided to give the biscuit dough a try. The whole family loved it! Mo says she likes it better than traditional pizza crust. No complaints from the cook – it’s super easy to throw together and not quite as messy as bread dough.

Start by making a batch of Fast and Easy Biscuit dough. One batch will make 2 large pizzas. I like to make this in my large cast iron pan which is 13 inches in diameter and a half batch of dough is just about perfect for this size. You can make this on a cookie sheet – round, square, or rectangle and just spread the dough as thin as you like.

Spread the dough onto the greased pan, taking care not to handle it too much. Biscuits are kind of like pie crust – if the dough gets handled too much it can turn out kind of tough. I find the easiest way to do this is to place the ball of dough in the center of the pan and press down in the middle to get it nice and thin, then try to push the dough out to the edges in as few motions as possible. Don’t be too fussy with it – no need for perfection!

Top the dough with some sauce. I used about 3/4 cup for this size, but use as much as you like.

Next, sprinkle on the mozzarella cheese.

Add your favorite toppings. I browned some ground turkey and added vidalia onions. Sausage would have been great on this, but I didn’t have any on hand. Use any combination of your favorite toppings. Sprinkle with dried oregano.

Pop this into a cold oven and turn the heat to 425 degrees. Bake for about 20 minutes.

Slice and serve.

Ingredients
  

  • 1 recipe FAST and EASY Biscuit Dough
  • 3/4 cup of spaghetti/tomato/your favorite jar or homemade sauce
  • 8 oz. package of shredded mozzarella cheese
  • PIzza toppings of your choice optional
  • sprinkle of dried oregano

Instructions
 

  • Make a batch of fast and easy biscuit dough.
  • Spread the dough onto a greased pizza pan, cookie sheet, or cast iron pan.
  • Spread sauce on the dough.
  • Spread shredded cheese on top of sauce.
  • Add your favorite pizza toppings.
  • Sprinkle with oregano.
  • Place in a cold oven and turn the heat to 425 degrees.
  • Bake 15-20 minutes.
  • Slice and Serve.
