Cheesy Chicken Tortilla Bake

This very delicious chicken dish came about by accident, as many recipes do. I had planned to make Enchiladas when my husband said, please nothing spicy for my stomach tonight. I was kind of bummed… I had the chicken, tortillas, and enchilada sauce ready to go. Then, he said how about something cheesy? So, I thought, how about I swap the enchilada sauce for cheese sauce? And, that’s what I did in this recipe. The kids all declared it delicious and asked that I make it again. It’s fairly simple to prepare with the most complicated part being the cheese sauce.

To get started, prepare a batch of cheese sauce. If you like things extra cheesy, make a double batch of cheese sauce and freeze any leftovers for a quick meal another day. Cook boneless chicken breast in a hot sauté pan with 1 Tbsp. of olive oil. Resist the temptation to stir/move the chicken and let it cook until it is nice and browned, then flip. Once the chicken is cooked, let it cool for a bit, then chop. Alternatively, you could make crockpot chicken and pull the meat off the bone to add to this casserole. The next step is to cook the corn tortillas if using raw or just heat up if using cooked. Follow the package directions for your tortillas.

In a 9×13 pan, begin layering the tortillas, chicken, and cheese sauce.

I made 2 layers, then topped with another layer of tortillas and poured the remaining cheese sauce over the top.

Bake at 400 degrees for about 30-45 minutes, until the cheese is nice and bubbly. Everything should be hot when it goes in the oven, so we are really just getting that cheese nice and bubbly and browned on top.

Serve as is or with fresh veges – tomato, onion, peppers, jalepenos, cilantro, or salsa. Yum!

Cheesy Chicken Tortilla Bake

Ingredients
  

  • 1 package corn tortillas 12 -15
  • 1 package of boneless chicken breast approx. 1.5 -2 lbs.
  • 1 recipe of cheese sauce

Instructions
 

  • Prepare the cheese sauce.
  • Cook the chicken breasts in a little olive oil over medium heat using a saute or fry pan.
  • Once browned on the first side, flip and cook until browned on the other.
  • Check to make sure the chicken is cooked through.
  • Cool and chop into bite sized pieces.
  • While the chicken is cooking, heat the tortillas.
  • In a 9x13 pan, place a layer of tortillas.
  • Sprinkle chicken over the tortillas.
  • Add 1/3 of the cheese sauce over the chicken.
  • Repeat steps above for another layer.
  • Top with a layer of tortillas and the remaining cheese sauce.
  • Bake at 400 degrees for 30-45 minutes.
