Crock-pot Sloppy Joes

Crock-pot Sloppy Joes are another yummy way to make great use of the crock-pot. This recipe for Sloppy Joes makes enough for at least 2 meals for our large family and can easily be frozen in smaller quantities for smaller portions. It’s also one of the most versatile recipes – no matter what I put in this, the kids always gobble it up! And using the crock-put just makes life easier – minimal prep and cooking time and the kitchen stays cool when it’s hot outside.

Start out by adding 3 pounds of ground meat (we like turkey), one large onion, one pepper, and about 3 large carrots (optional) to the crock pot. Make sure the veges are all chopped in somewhat small pieces.

Next, add a handful of chopped spinach (optional), (2) 28 oz. cartons of crushed tomatoes (or equivalent fresh, chopped tomatoes), 3 Tbsp. Worcestershire sauce, 1/3 cup brown sugar, 1 tsp. fresh grated ginger (or 1/2 tsp. dried).

Give it a stir.

Turn the crock pot to low for 10-12 hours or high for 6-8 hours and let it cook.crockpot sloppy joes 4

Give it a stir – should be boiling hot when done.

Serve over bread, rolls, rice, or veges (anything you like really). Our favorite way to serve this is over Easy Artisan Bread, No Knead Oatmeal Bread, or our new favorite grain, Farro.

Sometimes we add a sprinkle of sharp cheddar cheese on top, too. This recipe can be customized many different ways. For a more traditional flavor, stick with onions and peppers as the vegetables. Or, sneak in some greens; I think it’s a great way to add other veges (like the carrots and spinach) without impacting the flavor in a big way. If you want a vegetarian version, use beans and/or a grain instead of meat or just add more vegetables (mushrooms or sweet potatoes would be “meaty” choices). One of our favorite vegetables is cabbage and that would be good in this recipe too. If you like a spicier Sloppy Joe, add some additional spices like garlic and chili.

Ingredients
  

  • 3 pounds ground meat we use turkey

  • salt and pepper to taste

Instructions
 

  • Add all ingredients to the crock pot.
  • Stir.
  • Cook on low for 10-12 hours or high for 6-8 hours.
  • Serve over rolls, bread, rice, vegetables, grains, or pasta.
