Enchiladas over rice

The inspiration for this recipe comes from a local Mexican restaurant that serves Fajitas over Rice. I was looking for something to make with Chicken and spotted the Enchilada sauce in the freezer. I didn’t have time to make Enchiladas so thought of this dish. It was a HUGE hit with the family!

Start by cooking 2 cups of rice according to the package directions. I like to use brown rice which takes 45 minutes to cook, so I start this first. If you are using a quick cooking method, you might want to start this after the chicken. I think any kind of rice would be good with this. It’s really just a base for the sauce, so make whatever kind of rice you like.

Next,  chop a package of boneless chicken breast into bit sized pieces. The package I used was almost 2 pounds, but you can modify this to the number of servings pretty easily. If your making for a small family, then just use a smaller package of chicken. Heat up a large sauté pan and add a swirl of olive oil. Cook the chicken pieces, stirring occasionally. Chop a red pepper (or color of your choice) and 1 medium onion. Add these to the cooked chicken and keep cooking until the chicken and veges are cooked through and starting to brown a little. Next, stir in 2 cups of enchilada sauce. When I make enchilada sauce, I make at least a double batch and freeze in 2 cup containers, so it’s ready to go when I need it. In fact, I didn’t even thaw this before adding to the chicken. I just kept stirring it in until it all melted and cooked in with the chicken. If you have a favorite enchilada sauce, ready made or recipe, you could use that too. I like my easy enchilada recipe because it’s pretty quick to make and freezes well. Once you add the sauce to the chicken mixture, let this cook for about 5-10 minutes until it’s nice and bubbly.

Place a scoop of rice on a plate and spoon the chicken enchilada mixture over the rice. Sprinkle with shredded cheddar cheese. Those of us that like cilantro sprinkled some cilantro on top as well.

Ingredients
  

  • 2 cups brown rice or rice of your choice
  • 1-2 lbs boneless chicken breast chopped into bite-sized pieces
  • 1 red bell pepper chopped
  • 1 onion chopped
  • 1 Tbsp. olive oil
  • 2 cups enchilada sauce - see Easy Enchilada Sauce recipe
  • 8 oz package of shredded cheddar cheese.

Instructions
 

  • Cook rice according to package directions.
  • Heat up a large saute pan over medium heat.
  • Add olive oil to the pan when hot.
  • Add chicken and cook through.
  • Add pepper and onion and cook all until slightly browned.
  • Stir in enchilada sauce.
  • Heat until bubbly.
  • Place a scoop of rice on plate and pour enchilada chicken mixture over rice.
  • Sprinkle cheese on top and serve.
