Pasta with Roasted Tomatoes

This is a fast and easy recipe that you can throw together in hurry and tastes great too. The roasted tomatoes give this dish a really rich flavor and the fresh herbs add a nice fresh taste. You can easily omit the chicken sausage if you are looking for a meatless meal.

Pasta with Roasted Tomatoes and Chicken Sausage

This is a fast and easy recipe that you can throw together in hurry and tastes great too.

Ingredients
  

  • 1 lb pasta any shape will work – we like the rotelle or penne
  • 1 lb. Chicken sausage chopped into bite-sized pieces– the pre-cooked kind that comes in links (we used artichoke parmesan flavor, but Italian sausage or sun dried tomato would be delicious too)
  • 2 pints of cherry or grape tomatoes sliced in half
  • 2-4 cloves of fresh garlic chopped
  • 2 tablespoons of olive oil
  • ½ cup chopped parsley
  • ½ cup chopped basil
  • 1 cup freshly grated parmesan cheese

Instructions
 

  • Place cut tomatoes, garlic, and sausage on a cookie sheet (with sides).
  • Pour the olive oil over the garlic, tomato, and sausage mixture and toss to mix.
  • Sprinkle with salt and pepper.
  • Bake in 375 degree oven for 35 minutes.
  • Set the water to boil for the pasta and cook according to package directions.
  • Drain the cooked pasta and pour into a serving bowl or put it back in the pot.
  • Pour the sauce over the pasta and add the parsley and basil. Mix. You can add the cheese at this point too and mix it all together, but I like to serve it separately and sprinkle over each portion.

Notes

You can also omit the sausage and make this a vegetarian meal. It’s delicious either way!
