Longevity Spinach Dip

Spinach Dip is an easy recipe that goes together quickly and the ingredients are easy to have on hand. If you are growing the hot weather green, Longevity Spinach, this dip is a tasty way to use the spinach. I wouldn’t say it is overly healthy, so it probably counteracts all the great benefits of Longevity spinach, but it sure is delicious! 🙂 This can easily be made with regular spinach, or really almost any green. We typically serve it with wedges of toasted Easy Artisan Bread, tortilla chips, or carrots and celery.

I have included measurements in the recipe, but you can easily adjust these to your own tastes. Start by chopping some fresh spinach (longevity spinach, traditional spinach, or other green). In a bowl, mix the chopped spinach, mayo, cheeses, and fresh minced garlic until well combined.

Spread the mix into a pie plate (9″ works well). Top with the fresh chopped tomatoes. You can leave out the tomatoes if you don’t like them, but it does add great flavor and the acidity is a nice contrast to the cheese. Bake at 350 degrees for about 20-25 minutes. Serve warm with toasted bread, tortilla chips, or cut vegetables.

Longevity Spinach Dip

Fast and easy recipe for baked spinach dip. Delicious way to use longevity spinach.

Ingredients
  

  • 3/4 cup mayo
  • 8 oz. shredded mozzarella cheese
  • 1/2 cup shredded parmesan cheese
  • 2 cups chopped fresh spinach (longevity or regular)
  • 2 cloves minced garlic
  • 1/4 cup chopped tomatoes

Instructions
 

  • Wash and chop the spinach.
  • Mix all ingredients except tomatoes.
  • Spread mixture into a pie plate.
  • Top with chopped tomatoes.
  • Bake at 350 degrees for about 20-25 minutes, until lightly browned on top.
  • Serve with toasted pieces of easy artisan bread, tortilla chips, or vegetables.
