Chocolate Chip Oatmeal Cookies

Oatmeal Chocolate Chip Cookies are pretty popular in our house! Car particularly enjoys making these and they always disappear quickly. They taste like a traditional chocolate chip cookie with added chewy texture of oatmeal – yum!

Mixing the Batter for Oatmeal Chocolate Chip Cookies:

To get started, cream the butter and sugars in a mixer until light and fluffy. I think this is one key to making great cookies – you really want to beat this for a long time. The color gets very light and the texture is a creamy fluffy mix. I usually use a medium speed (5)  on my kitchen-aide for this part.

Next, turn the speed down to low and mix in the eggs and vanilla. I like to crack the eggs into a measuring cup first just to ensure that no shells end up in the batter. Once you add the eggs and vanilla, keep the speed on low until everything is well-incorporated. Stop it every so often to scrape down the sides.

The dry ingredients go in next. Keep the speed on low and mix until well-incorporated, scraping the sides down as needed.

Add the chocolate chips and oatmeal. Keep the mixer on low and just turn it on for a little bit. Try not to over mix because the chocolate chips will get too mushy. Alternatively, this part could be mixed by hand with a wooden spoon.

Baking the Oatmeal Chocolate Chip Cookies

The next step is to spoon the batter onto cookie sheets (I like to use AirBake for cookies). AirBake cookie sheets are one of the best baking inventions in my opinion! Cookies consistently come out perfectly cooked and never burned.

Bake in 350 degree oven for 10-12 minutes. This is a pretty standard baking time for regular cookie sheets. I have found that when I bake 2 cookie sheets at a time, using AirBake cookie sheets, 16 minutes is about perfect. The AirBake sheets take a little longer for the cookies to brown up, but they cook really evenly. So bake for 8 minutes, then switch them out (move the bottom sheet to the top rack and top sheet to the bottom rack). Bake for another 8 minutes.

Instructions
 

  • Beat the butter and sugars until light and fluffy.
  • Add the eggs and vanilla, beating on low speed until incorporated.
  • Add the flour and baking soda, mixing on low speed until mixed well.
  • Stir in the chocolate chips and oatmeal, being careful not to over-stir.
  • Bake at 350 degrees for 10-12 minutes (or 16 minutes if using airbake sheets)
