Pumpkin Cake

Easy to make, moist and delicious pumpkin cake that even NON-pumpkin eaters will LOVE!
Cake Batter
- 4 eggs
- 1 1/2 cups sugar
- 1 cup vegetable oil
- 1 can pumpkin 100% mashed pumpkin, not pie filling
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. ginger
- 1/2 tsp. cloves
- 1 cup chopped walnuts or pecans optional
Crumb Topping
- 1 cup flour
- 1 cup brown sugar
- 1/2 cup 1 stick butter
- 1 tsp. cinnamon
In a large bowl, mix eggs, sugar, oil, and pumpkin with a whisk until well combined.
Add dry ingredients, mix well.
If adding nuts, stir in at this point.
Pour batter into a greased 9x13 baking pan.
Topping
Mix all topping ingredients with a berry masher, fork, or food processor until it starts to clump together.
Sprinkle on top of cake batter.
Bake at 350 degrees for 40 minutes.
Cool, slice, and serve.
