Pumpkin Cake

Easy to make, moist and delicious pumpkin cake that even NON-pumpkin eaters will LOVE!

Ingredients
  

Cake Batter

  • 4 eggs
  • 1 1/2 cups sugar
  • 1 cup vegetable oil
  • 1 can pumpkin 100% mashed pumpkin, not pie filling
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. ginger
  • 1/2 tsp. cloves
  • 1 cup chopped walnuts or pecans optional

Crumb Topping

  • 1 cup flour
  • 1 cup brown sugar
  • 1/2 cup 1 stick butter
  • 1 tsp. cinnamon

Instructions
 

  • In a large bowl, mix eggs, sugar, oil, and pumpkin with a whisk until well combined.
  • Add dry ingredients, mix well.
  • If adding nuts, stir in at this point.
  • Pour batter into a greased 9x13 baking pan.

Topping

  • Mix all topping ingredients with a berry masher, fork, or food processor until it starts to clump together.
  • Sprinkle on top of cake batter.
  • Bake at 350 degrees for 40 minutes.
  • Cool, slice, and serve.
