Banana Pecan Cake Recipe

Light and fluffy banana cake with crunchy pecans!

Ingredients
  

  • 1/2 cup 1 stick butter
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 very ripe banana mashed with a fork
  • 1/2 cup sour cream
  • 2 tsp. vanilla extract
  • 1/2 cup chopped pecans

Instructions
 

  • Cream the butter and sugar until light and fluffy.
  • Add the eggs and mix well.
  • Add the flour and baking soda, mixing well.
  • Add the banana, sour cream, and vanilla. Mix well.
  • Sir in the pecans.
  • Spread into a greased 8x12 or 9x13 cake pan.
  • Bake at 350 degrees for 40-45 minutes.
  • Cool. Slice and serve.
