Strawberry Cashew Ice Cream

An easy dairy free Strawberry Ice Cream recipe made with raw cashews and coconut milk!

Ingredients
  

  • 1 cup raw cashews
  • water to soak cashews in
  • 1 can unsweetened first pressing coconut milk
  • 1/2 cup honey or sugar
  • 1 tsp. vanilla extract
  • 2 cups fresh or frozen strawberries

Instructions
 

  • Soak the RAW cashews in fresh water for at least 4 hours.
  • Drain the cashews and discard the soaking water.
  • In a blender, mix the cashews, coconut milk, honey, and vanilla extract.
  • Blend until very smooth.
  • Chill for 2-3 hours or overnight.
  • While cashew mixture is chilling, chop strawberries.
  • Add cashew mixture and strawberries to a pre-chilled bowl of ice cream maker.
  • Follow the instructions on your ice cream maker to churn this delicious mixture into ice cream - mine takes about 10-12 minutes.
  • Serve or freeze.
