In a small frying pan, heat up a little olive oil and sauté the mushrooms until golden and a little crispy in places. Set aside.
In the same pan that you used to sauté the mushrooms, add a little more olive oil and cook the sausage until nicely browned. Set aside to cool a bit.
In a small bowl, mix all the dressing ingredients and whisk with a fork.
To assemble the salad, put the salad greens in a large bowl.
Sprinkle with chopped red pepper and mozzarella cheese.
Add the sausage and mushrooms.
Top with the dressing
Sprinkle the parmesan over the top.
