Cardamom Poppy Seed Coffee Cake

Delicious, moist, light cake with the unique flavors of cardamom and poppy seeds.
Cake
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cardamom
- 3/4 cup 1 1/2 sticks butter
- 1 cup sugar
- 2 large eggs
- 1 cup yogurt or sour cream
- 1 tsp vanilla extract
- 2 Tbls poppy seeds
Topping
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup 1 stick butter
- 1 tsp cardamom
- 1 tsp cinnamon
For the batter
With a mixer, cream the butter and sugar until light and fluffy.
Add the eggs one at a time on low speed, waiting until fully incorporated before adding the next.
Add the yogurt and vanilla, mixing on low speed.
Add all the dry ingredients. Mix until incorporated and batter is smooth.
Assemble
Spread the batter in a well-greased 9x13 cake pan.
Sprinkle the topping over the batter.
Bake at 350 degrees fro 35-45 minutes. A metal pan will cook faster - I use a glass pan and bake for 45 minutes.
