Roasted Potatoes

Ingredients
  

  • 5 lbs red or Yukon gold potatoes
  • 3 Tbsp olive oil
  • 1 tsp caraway seeds
  • 1 Tbsp dried rosemary
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1 ½ tsp salt
  • 1 tsp ground black pepper

Instructions
 

  • Chop the potatoes into small bite sized cubes.
  • In a large bowl, toss the potatoes and the oil.
  • Add the seasonings and toss again to coat evenly.
  • Spread onto 2 cookie sheets (the kind with a rim all the way around).
  • Bake at 450 degrees for at least 30 minutes, longer if you like them crispier. I like to switch the trays half way through to make sure they are crispy on both the top and bottom.
