Cardamom Poppy Seed Coffee Cake

This has been my go to coffee cake recipe for quite some time. It’s always delicious and a big hit with everyone I serve it to. If we make it on a weekend, which Car loves to do, it’s usually gone by noon! If you don’t like poppy seeds, you can easily leave them out and this will still taste great. You can also leave off the topping if you want to cut back on the sugar, but it sure is delicious!

Cardamom Poppy Seed Coffee Cake

Delicious, moist, light cake with the unique flavors of cardamom and poppy seeds.

Ingredients
  

Cake

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cardamom
  • 3/4 cup 1 1/2 sticks butter
  • 1 cup sugar
  • 2 large eggs
  • 1 cup yogurt or sour cream
  • 1 tsp vanilla extract
  • 2 Tbls poppy seeds

Topping

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup 1 stick butter
  • 1 tsp cardamom
  • 1 tsp cinnamon

Instructions
 

For the batter

  • With a mixer, cream the butter and sugar until light and fluffy.
  • Add the eggs one at a time on low speed, waiting until fully incorporated before adding the next.
  • Add the yogurt and vanilla, mixing on low speed.
  • Add all the dry ingredients. Mix until incorporated and batter is smooth.

For the topping

  • Mix all topping ingredients with a fork or berry masher until crumbly

Assemble

  • Spread the batter in a well-greased 9x13 cake pan.
  • Sprinkle the topping over the batter.
  • Bake at 350 degrees fro 35-45 minutes. A metal pan will cook faster - I use a glass pan and bake for 45 minutes.

Cream the butter and sugar until light and fluffy.

Add the eggs one at a time on low speed. These first 2 steps take some patience, but the light airy texture is worth the time. Mix in the vanilla and yogurt.

Add all the dry ingredients and mix well, until the batter is nice and smooth.

Spread the batter in a well-greased, 9×13 pan.

Mix the topping ingredients until crumbly. The kids love using a berry masher to mix this topping – it actually works really well.

Sprinkle the topping over the batter and bake at 350 degrees for 35-45 minutes.

There are a few ways that you can tell if baked goods are cooked all the way through. Take a toothpick and stick it in the middle. If it comes out clean, then it’s done. If it has batter on it, bake for 5-10 additional minutes. You can also press in the middle lightly – if it springs back, then it’s cooked; if not, then bake for an additional 5-10 minutes. Also, take a look at the edges – the cake should pull away from the sides just a little bit.
