Garlic Rosemary Roast Pork

This delicious Garlic Rosemary Roast Pork was easy to make and a big hit with the family. Served with Smashing Squash and Cranberry Apple Pear Sauce, this made for meal full of yummy Fall flavors.

Using a Dutch oven to roast this pork made the cooking super easy. My cast iron Dutch oven is one of my favorite cooking tools. When used for roasting meat, it’s similar to crock pot cooking – the meat comes out moist and delicious. It’s also very versatile – I have used it to roast meat, pop popcorn, bake up a delicious loaf of bread or just about any type of casserole. It was traditionally used to cook over open fires, so it can be used on the stove top or in the oven. I’m a little partial to cast iron and like to cook just about anything in it. 🙂 The only negative I’ve found with cast iron, is that it’s heavy. This usually doesn’t bother me and I think of it as good exercise, but on a day that I’m tired and just want to get dinner done quickly, that darn cast iron can be heavy.

So, to make this delicious Garlic Rosemary Pork Roast start with a pork loin roast – about 3 pounds. Across the top, I made multiple slits about 1 inch deep so that I could tuck in slices of garlic.

I took 3 cloves of garlic, peeled and trimmed, and cut them into little slices, about 1/8 inch thick.

Just tuck them into each slit.

Next, I added a few sprigs of rosemary and a sprinkle of salt and pepper.rosemary garlic roast pork 4

Add the cover bake in a 300 degree oven for 2 hours. Let it rest out of the oven for about 20 minutes before slicing and serving. The timing is pretty flexible with this – since it is slow roasting, the timing is not critical. You can let it set out of the oven for quite a while and the Roast will stay warm. Since it’s a moist heat inside the dutch oven, the Pork won’t dry out.

It was so delicious! The slices of garlic roasted right into the pork, so you could see them in a few slices and since they had roasted for 2 hours, they were so mild and delicious. Garlic and rosemary are always a great combination and I particularly like the taste with pork.

Garlic Rosemary Roast Pork

Easy and delicious Roast Pork recipe with fresh garlic and rosemary.

Ingredients
  

  • 3 lb. pork loin roast
  • 3 cloves fresh garlic
  • 3-4 sprigs of fresh rosemary or substitute dried
  • salt and pepper to taste

Instructions
 

  • Place the pork in a dutch oven.
  • With a small paring knife, make slits into the top about 1 inch deep.
  • Peel 3 cloves of garlic and slice into 1/8" thick slices.
  • Tuck the garlic slices into the slits in the top of the roast.
  • Add the sprigs of rosemary on top and sprinkle with salt and pepper.
  • Cover and bake at 300 degrees for 2 hours.
  • Remove from oven and let rest for about 20 minutes.
  • Slice and serve.
