Enchiladas Over Rice

Easy chicken recipe - chunks of chicken in enchilada sauce, served over rice.
- 2 cups brown rice or rice of your choice
- 1-2 lbs boneless chicken breast chopped into bite-sized pieces
- 1 red bell pepper chopped
- 1 onion chopped
- 1 Tbsp. olive oil
- 2 cups enchilada sauce - see Easy Enchilada Sauce recipe
- 8 oz package of shredded cheddar cheese.
Cook rice according to package directions.
Heat up a large saute pan over medium heat.
Add olive oil to the pan when hot.
Add chicken and cook through.
Add pepper and onion and cook all until slightly browned.
Stir in enchilada sauce.
Heat until bubbly.
Place a scoop of rice on plate and pour enchilada chicken mixture over rice.
Sprinkle cheese on top and serve.
